Cut tofu into cubes. Mince vegi meat and ham. Cut carrots into small cubes.
Cook tofu in salt water for a few minutes. This will prevent the tofu from breaking during cooking.
In a hot wok, add canola oil and ginger, heat until fragrant. Add vegi meat, vegi ham, hot bean sauce and carrots. Stir until fragrant. Add water and allow to simmer for a few minutes. Add tofu and mushroom seasoning to taste. Allow to simmer until the favor soaks in. Add edamame beans, hot chili oil and corn starch mixed in water to thicken the sauce. Serve.
