Slice red pepper, wood ears, and fresh mangos.
In a heated wok, add ginger and oil. Stir until fragrant. Add ketchup, rock candy syrup, salt and water. Stir. Add fresh mango slices. Stir. Add wood ears, red pepper, pine apples, and rice vinegar. Stir. Add vege chicken balls. Stir. Add peas. Stir and serve.
